The secret of Japanese cuisine

Iriko is Dried tiny anchovy mainly used for fish bloth which is necessory for Japanese food such as Miso soup or Udon soup. Iriko is also good for snack to eat, you can enjoy the gift from the sea directly!
Dried fish seems not to enjoy its freshness but only fresh anchovies can be Iriko, so the fresh flavour of anchovy spread in your mouth!
